Recipe Review: 3 Ingredient Keto Peanut Butter Cookies

I know it’s been a while, and I’ll do a life update at some point, but for now, I need to talk about this recipe.

So, I decided to try a peanut butter cookie recipe because I was jonesing for something dessertish. So, I googled keto peanut butter cookie recipes, and a bunch of the three ingredient recipes came up. I was feeling lazy, and figured I’d give it a go (I used this one).

The ingredients are as follows:

  • Peanut butter (duh)
  • Egg
  • Sweetener

You mix it everything together and then bake it at 350 for 12 minutes. Simple. You don’t need a mixer of any kind. One bowl and one spatula.

The problem is, the recipe sucks. I used Whole Foods brand organic peanut butter (just peanuts and salt) and Lakanto sweetener. I found it to be too sweet and lacking in a substantial peanut flavor. I think the recipe could used some salt, a hit less sweetener, and more peanut butter or roasted peanuts. Something. I have idea. But the bottom line is that it needs more peanut flavor. I spread some additional peanut butter on the cookies because it was lacking in peanut flavor that much.

I don’t have pictures because I ate all of the cookies- they were there and I was desperate- before deciding that a review was in order. I wouldn’t ever recommend this recipe or make it again. The only positive to this recipe is in the laziness department. That’s it.
